Somedays!

Why is it that somedays I can cook up a meal fit for a King, while other days the meal isnt worth feeding the lowliest of souls.

Yesterday I popped a roast in the crock pot, added some f resh pico de gilo, adobo and about 1/2 an onion. I let it cook for 10-12 hours on high.
Within a few hours the smell of future shredded beef wafted through the air.
When it was tender I shredded it, Danielle helped.
We made more Pico de gilo, shredded some cheese, got some of the creamiest sour cream and crunchiest lettuce for those who wanted it.  I heated the flour tortillas over the open flame on our stove.
I had my first try at PR rice and beans!
Taylor wasn't sure I would get her friend Tati's mom's recipe right, but she gave it a thumbs up and took some to school today for lunch!
Yes I must say...
"Perfect start to a confrence sunday."



Coming off such a high I thought that today could be a veggie day....
ok, guess I didnt put much thought into it.


We had extra potatoes that needed to be used before they went bad.
Sweet Danielle peeled them for me.
Taylor pulled out more sour cream, cheese, a couple of cans of cream of chicken soup and a splash of milk.
After shaving the potatoes into thin shreds, using the best kitchen tool ever,  The Salad Shooter,  I added the ingredients to the potatoes and popped them into the oven.
Well let me tell you, IF you DONT have the right ingredients (i prefer the frozen taters? dont ask.)  dont expect too much.
They didnt turn out just right. sigh!

I made steamed broccoli...yummmm, but then I had to have cheese sauce.
What is up with that?
The cheese sauce was not as cheesy as I wanted, but it wasnt runny.

There is a moral to this story. 
  Sometimes you have to keep trying to get it right.
Some people would  not have told you their failure.  But I know you'll love me more for it!
So, as I have been saying for quite a while now, there will be more meal planning and  less last minute cravings.  That doesnt seem to work for me.

So tell me about your successes and failures in the kitchen.
Trust me, I came into this marrage with very few kitchen skills.
It is fun to be able to teach my children so they can go into the world with more than I had.

  1. Looking soooo good! I haven't done a beef roast, just the pork. Hmmmm... have to try!
